Teevan: The Dynamic Meat Delight of Sindh

The famous Sindhi mutton curry is a mild spicy Sindhi specialty. It’s a dynamic meat lover’s delight. So let’s take a look at this easy recipe to make the popular ‘Teevan’ also termed as ‘Seyal Teevan’.

Ingredients of Teevan: 

1 kg mutton cut into pieces

1 Tbsp lime juice

2 Tsp Cumin powder

1 tsp Garam Masala

2 tsp Turmeric powder

2 tbsp chopped coriander

6-8 green chilies chopped

2-3 pieces each of bay leaf, whole black cardamom, Cinnamon sticks, and cloves

1 Tbsp Garlic Paste

1 Tbsp Ginger Paste

4 large Onions finely chopped

4 potatoes cubed

5 Tomatoes chopped

1/2 Cup curd

Freshly ground green Cardamom powder

Salt to taste

6 Tbsp oil

Cooking Method of Teevan: 

Firstly, clean chop and dry the mutton pieces. Marinate the meat by utilizing the lime juice, ginger garlic pastes, salt, curd and 1 tsp turmeric powder (you may add a pinch of garam masala). Let the meat marinate for about an hour.

Add three tbsp oil in a deep pan, when hot add all the whole masalas – bay leaf, whole black cardamom, Cinnamon sticks, cloves provide it a quick stir and then add in the marinated mutton. Sear the mutton well on all sides to fix in the juices. turn off the heat when well seared (it should take about ten minutes)

In a pressure cooker, heat three tbsp oil add onions, chilies, tomatoes, cumin powder, Turmeric powder and salt, keep stirring till tomatoes and onions become soft and leave oil from sides

Now add the seared mutton into the pressure cooker, add 1 cup water, potatoes, adjust salt and finally add garam masala. Cover and pressure cook for twenty minutes.

Before serving the Teevan, sprinkle freshly ground green Cardamom powder and coriander leaves.
